How we started
Kai's Kookies & More was started by Tracy
Watkins when her eleven-year career as an
Electrical Engineer came to an end in 2002.
Being a devoted parent, Tracy wanted to be
more available to her daughter Kai
(pronounced "ky") who had been diagnosed
with cerebral palsy. Kai required physical,
speech and occupational therapy once a week
and Tracy wanted to be able to take her
daughter to therapy without feeling the stress
and guilt associated with taking time off from
work. The Watkins family was also expecting
their second child. Having a child with special
needs has taught Tracy that we should not take
any moment of our lives for granted. We
should appreciate every smile on our children's
faces as well as any accomplishment no matter
how small. We should also view life's
challenges as opportunities. Inspired by her
children and encouraged by her husband and
close friend Vanessa Hubbard of Escape
Concepts, Kai's Kookies & More was born.Kai's

Kai’s Kookies & More LLC is a family-owned bakery that specializes in
handmade custom-designed cookies and cheesecakes. Tracy Watkins,
a former electrical engineer who wanted to be more available to her
daughter Kai, launched the cookie business with her husband Patrick, a
former civil design engineer. Today, Kai’s Kookies & More products can
be found in eight restaurants, four shops and four Monkey Joe’s in the
Charlotte area. Kai’s Kookies & More started out selling their hand-iced
sugar cookies at the Philip’s Place Dean & Deluca. Now they have
several different house cookies, pastries, cakes, cupcakes, “Bouji”
cheesecakes, as well as the specialty cookies. The bake and coffee
shop is also available for specialty parties, such as birthday or tea
parties.
The “Bouji” gourmet cheesecakes are available in nine delicious
varieties, each topped with a flavored cream. The “Bouji” gourmet
cheesecakes are Pineapple, Oreo, Key Lime, Turtle, Amaretto,
Raspberry, Strawberry, Mango and Mudslide with more to come. Each
order is made fresh and handcrafted. These cheesecakes would be a
heavenly desert for any event. We specialize in delicious, gourmet
cookies in a wide array of fun and fanciful shapes. Cookie favors to help
your special occasion become a sweet reality and eventually a sweet
memory. Our Cookies can be packaged as cookie bouquets or in
baskets. We love creating cookies for special occasions. The sugar
cookies are hand-iced with royal icing. They can be decorated with
company logos or personalized with event dates.
We offer gift boxes and baskets with assorted house cookies and hand-
iced sugar that are ideal for clients as “Thank You,” holiday or any
occasion gift. We can deliver in the Charlotte area for a minimal delivery
fee or ship via FedEx. We can decorate the hand-iced cookies with your
company logo, your client’s logo and/or other messages for an
additional cost. If we do not have the cookie cutter for the shape
desired, we can customize a cookie cutter for your needs. These gift
boxes and baskets start at $25.
Cookie bouquets can also be created with cookie pops. These cookie
bouquets are available in various sizes and start at $25. We will work
with you to create a cookie bouquet to let your clients know how much
you appreciate them. Past customers and recipients of our cookie
