Kai's Kookies & More was started by Tracy Watkins when her eleven-year career as an Electrical Engineer
came to an end in 2002.  Being a devoted  parent, Tracy wanted to be more available to her daughter Kai
(pronounced "ky") who had been diagnosed with cerebral palsy.  Kai required physical, speech and
occupational therapy once a week and Tracy wanted to be able to take her daughter to therapy without
feeling the stress and guilt associated with taking time off from work.  The Watkins family was also
expecting their second child.
Having a child with special needs has taught Tracy that we should not take any moment of our lives for
granted.  We should appreciate every smile on our children's faces as well as any accomplishment no
matter how small.  We should also view life's challenges as opportunities.  Inspired by her children and
encouraged by her husband and close friend Vanessa Hubbard of Escape Concepts, Kai's Kookies &
More was born.
